Sounds like you want individual overrides for specific meeting rooms. So, I have a feeling you know about the admin level capability of setting a longer time to keep meeting rooms here:

I did know about that. Yesterday the Executive Secretary had to recreate a couple of meeting rooms that get used every other month. However I like keeping the inactivity limit set lower to cleanup those one time meetings.
