From the Lifesize remote controller, it's possible to mute all attendees but that's not possible to unmute them.
(that works fine from the Lifesizephone).
Could explain me why ?

Confirming that this is a bug on the Icon that is being tracked by engineering with case number ICON-1740.
When you have the Icon system set as the moderator you can select mute all using the remote control from the video display as depicted below.
You can also make yourself the moderator and join the call via the new desktop or web app, that way you have a full set of moderator specific controls. You can watch the following video below to learn more.

In fact, I think it's a bug : I can mute / unmute all participants from a Lifesize Phone, but, with the remote control I can just mute but not unmute all participants. (If I try to click a second time it doesn't work).

Just to clarify, are you talking about the mute button on the Lifesize remote itself? The mute button on the remote is only designed to be used to perform a local mute/unmute. You can use Robert's explanation above to navigate into the on-screen menu to mute/unmute all participants as part of the Moderator controls.
No, I don't use the mute button on the remote.
I use the "mute/unmute all participants" feature from the screen UI.
And I confirm that not works.
The Lifesize support considered this issue.
